We also have eliminated gluten, casein, and soy from our daughters diet several months back. We have seen some nice changes. Your meals you make sound a lot like my daughters including all the enzymes and supplements. Did you have any bloodwork done to determine if she has sensitivities to these foods? We did and found out that she was sensitive to many foods most likey due to "leaky gut" syndrome. We also give our daughter Almond Breeze milk. It does have soy lecithin in it which is good for the brain and heart. Since there is none of the soy protein, which is what people are most sensitive to, left in the lecithin, it is not usually a problem for people avoiding soy. I have read places that this diet should be tried for a least a year to see the full benefits. We have a ways to go! Good luck!!

Great job! Just wanted to let you know that your almond milk won't be soy-free unless you're making it from scratch. From what I understand, all almond milks on the market right now have soy. Might want to check into that to make sure.
